Recipe: Scrumptious Eggs (baked with ham and cheese)
Breakfast and BrunchSCRUMPTIOUS EGGS
6 cups (1 1/2 lb) shredded Monterey Jack cheese, divided
3/4 lb fresh mushrooms, sliced
1 small onion, chopped
1/4 cup butter or margarine
1 cup cubed, cooked ham
7 eggs, beaten
1 3/4 cups milk
1/2 cup flour
1 tblsp your favorite Seasoning Salt
1 tblsp fresh parsley, chopped
Preheat oven to 350 degrees F.
Place half of cheese in a buttered 13x9x2-inch baking dish.
In a large skillet, saute mushrooms and onions in the butter until tender; spoon this mixture over the cheese.
Sprinkle the ham on top of the vegetable mixture; top with the remaining cheese.
Combine the rest of the ingredients; beat well. Pour egg mixture evenly over the cheese.
Bake at 350 degrees F for 45 minutes or until set.
Servings: 10-12
