SPANISH RICE (ARROZ CON TOMATE)
1/2 cup chopped green bell pepper
1/4 cup chopped onion
1 clove garlic, minced
1/2 teaspoon dried basil, crushed
1/2 teaspoon dried rosemary, crushed
2 tablespoons olive oil
1 cup long grain rice, uncooked
2 cups water
1 cup chopped, peeled tomatoes
1 teaspoon salt
1 dash pepper
In skillet cook green pepper, onion, garlic, basil and rosemary in hot oil till vegetables are tender.
Stir in rice, 2 cups water, chopped tomatoes, salt and pepper. Cover and cook over low heat for about 20 minutes or till rice is done.
Makes 6 servings
