Strawberry Mousse

1 small pkg of strawberry flavored jello.
1-1/2 cup of boiling water.
1 lb fresh strawberries, hulled and sliced on an egg-slicer
2 tbls sugar
1 cup whipping cream

Slice strawberries, stir with sugar
Dissolve Jello in boiling water, cool until almost set
Whip cream until fairly stiff, but not hard
Mix thick jello into whipped cream, stir in strawberries. Pour into ring-shaped mold.
Cool in fridge until set.

Filling/sauce
1 lb fresh strawberries, hulled and quartered.
4-5 tbls sugar
a little lime or lemonjuice
(powdered pectin, optional)

Sugar strawberries, drizzle with citrus juice. Let stay to get a little juicy, but not in fridge.

Unmould mousse, fill hole with quartered strawberries, and put rest of the berries around mousse.
Decorate with a leaves of lemon balm, and have more whipped cream, slightly sweetend, ready in extra bowl
