Sweet Potato Casserole with Praline Topping
3 cups fresh sweet potatoes, cooked and mashed or 2 (15 oz.) cans sweet potatoes, drained and mashed
1/4 cup sugar
2 tbsp. light margarine
1/2 cup egg substitute
1/2 cup raisins (optional)
1 tsp. Vanilla
Topping:
1/2 cup brown sugar
2 tbsp. flour
2 tbsp. light margarine, melted
1/4 cup chopped pecans
Whip potatoes while hot. Add remaining ingredients; mix well. Pour into greased casserole dish.
Combine topping ingredients.
Top potatoes with topping; bake at 350 degrees for 20-25 minutes.
Makes 8 servings
Per serving: CAL 269 (16% from fat); FAT 5g; PROTEIN 4g; CARB 53g; CHOL 0mg, SODIUM 82mg
