Tex Mex Chicken Stir Fry

1 tbsp corn oil
1/2 of a packet low salt taco seasoning
1 lb (450g) boneless, skinless chicken tenders
2 cups Western-style frozen vegetables (corn, onions and peppers), thawed
15 oz can pinto beans, drained and rinsed

Spray a large, nonstick pan with cooking spray and add corn oil. Place pan over medium-high heat. Add taco seasoning and chicken tenders; stir-fry about 10 minutes. Add frozen vegetables and beans and stir-fry about 5 minutes more. Yields about four 1-cup servings.
