Hi Tania. Just saw your request for Ukrainian recipes. I am Ukrainian and live
north of Milwaukee. My parents are from Ukraine. Most of the recipes from my
mom have no measurements and that's how I make them. I have three wonderful
books, two of which I haven't found yet because we just moved. The one I did find is called Nasha Kuhnya (Our Kitchen). It's great. Here are some recipes that are a little different from Sally's. Now you'll have variety! I'd love to e-mail more if you want them.

Pierogi's

1 egg 3 cups flour
1 cup lukewarm water 1T vegetable oil

Beat egg with a fork in a large mixing bowl. Add water and oil. Add the flour one cup at a time, mixing with fork until very thick. Then turn out on a floured cutting board and knead dough until all the flour is mixed. (My mom kneads until satiny. Don't over knead.) Makes about 45.Potato cheese filling:
Saute chopped onion in butter. Make mashed potatoes. Add 1 8oz. pkg cream cheese and and a few tablespoons butter from sauted onions and mash into potatoes. (My kids eat these up!)

For vushki I use the dough from the pierogi's and cover button mushrooms (singly). We eat these in borscht.

The recipe I have with farmer's cheese is:

Linyvi Varenyky (Lazy man's dumplings)

1 lb. farmers cheese (found in the cheese section, looks like a wedge but is like cream cheese)
1-1/2 cups flour 2 eggs 1 tsp salt

Combine all ingredients. Take part of the mixture and on a well floured board; roll into a finger thick roll. Flatten the roll and cut into 2" bars. Drop bars into salted boiling water and stir gently with a wooden spoon.

When dumplings rise to top of the the boiling water, remove dumplings to a colander and let drain. Pour melted butter over the dumplings. Serve with sauted onions and sour cream.
