Wheat Gingerbread Cookies
1 1/2 cups granulated sugar
1 cup margarine, softened
1/2 cup molasses
1 egg
2 teaspoons baking soda
2 teaspoons cinnamon
2 teaspoons ground ginger
1/2 teaspoon salt
1 cup whole wheat flour
2 3/4 cups all-purpose flour
In large bowl, with electric mixer beat together sugar and margarine till light and fluffy. Add molasses, egg, baking soda, cinnamon, ginger and salt; blend well. Stir in whole wheat flour and all-purpose flour to form a soft dough. Cover and chill dough 30 minutes for easier handling.
Shape dough into 1-inch balls. Place 2-inches apart on ungreased baking sheets.
Bake in preheated 350F oven 12 minutes or until golden brown. Cool 1 to 2 minutes before removing from baking sheet. Transfer to wire rack to cool.
