ZIPPY PINTOS WITH HAM HOCKS
1 pound pinto beans, washed and soaked several hours
3 tablespoons olive oil
1 onion, chopped
2 to 3 cloves garlic, sliced
5 to 6 cups beef, chicken, or vegetable stock
1 ham hock and/or chunks of salt pork
1 to 2 tablespoons Spicy Island Bean Blend, or any other good quality spicy dry seasoning mix
salt and pepper, as needed
Wash and soak the beans several hours. Drain.
In a heavy bottomed stock pot, heat the oil and saute the onion and garlic several minutes.
Add remaining ingredients. Cover. Reduce to simmer and cook for about 2-3 hours, or until tender to your taste.
