Title: Zucchini Rice Squares

Makes 6 servings

1 cup chopped onions
1 tbsp butter or margarine
1 lb zucchini, cut in 1/4 inch slices (3 1/2 cups)
1 cup uncooked rice
14 oz. chicken broth (can or fresh)
1/2 cup grated parmesan cheese
1/4 cup snipped fresh parsley
2 eggs, beaten
1/8 tsp hot pepper sauce
1 cup mozzarella cheese, shredded

Cook onions in butter in a saucepan over medium heat until transparent. Add zucchini, rice and chicken broth. Bring to a boil and stir. Reduce heat, cover and simmer 15 minutes, or until the rice is tender and the liquid is absorbed.
Combine parmesan cheese, parsley, eggs and pepper sauce; add to cooked rice. Pour into buttered 8 or 9 inch square pan. Top with mozzarella cheese. Bake at 350 degrees F. 15 to 20 minutes.
