Good to see you posting here again and hope all is well with you.....re the corned beef - thanks for putting in the explanation of what corned beef is in the U.S (pickled) - because now i've realised that it's completely different to the corned beef we have here, which, btw is totally gross!! If anyone has ever heard of, or had the misfortune of eating Spam (similar in production but pork, not beef), you'll know what i'm talking about!! Basically, corned beef here comes in a tin, is choc full of fat (you can see it), the meat is shredded, has horrible bits in it (gristle etc)and is all condensed together to form this horrible lump! You are supposed to slice it and have it either as a cold cut (sandwiches etc) or as an ingredient - corned beef hash, corned beef fritters etc. >;[ YUKKK!! So glad to hear your recipe doesn't contain OUR corned beef; your's sounds MUCH nicer!! I would give it a go but i don't think i'd be able to find pickeled beef here.....btw i think you're right about the recipe being an Irish American thing.
