A little more on kosher salt

Kosher salt is, I believe, the salt used to kosher meats - should be called koshering salt. I have no idea what process is involved! I use it all the time, it has a clean flavor that I like. I read an article about the various types of salt recently. If I can remember where, I'll post it here.
