I heartily agree with your dissapointment with dry and tasteless pork these days! I have found a good way to help, though -- it is to brine your pork chops or loin, in the same way as brining a turkey, which has become so popular these days.

Brining pork chops or pork loin takes much less time than brining a whole turkey, and it makes a huge difference!
