Recipe(tried): Sunday Dinner at Our House - Roast Chicken with Vegetables, New Potatoes in Microwave White Sauce, Cauliflower and Red Bell Pepper Strips

Hi, everyone! Today for lunch we had: roast chicken, cauliflower with red bell pepper strips, new potatoes with white sauce, sliced strawberries with whipped cream, garlic toast, CLAUSSEN Pickles, and sweet tea with lemon.

ROAST CHICKEN WITH VEGETABLES

4 chicken breasts, washed and patted dry
1 can chicken broth
1 cup sliced celery
1 cup chopped onions
1 red bell pepper, seeded and sliced into thin strips
3 cloves garlic, minced
1/2 cup white wine
1-2 sprigs rosemary, chopped
2 T. butter
seasoned salt, pepper, poultry seasoning, and garlic powder

Preheat oven to 350 degrees. Spray a 9X13" pan with PAM. Place vegetables in the bottom of the pan.Sprinkle the chicken breasts with seasoned salt, garlic powder, poultry seasoning, and pepper. Place butter between the skin of the chicken and the meat. Place chicken breasts, plump side down, on top of the vegetables. Sprinkle rosemary around the chicken breasts. Combine white wine and chicken broth. Pour around the chicken breasts. Bake for 1 hour. Remove the pan from the oven. Turn the chicken breasts over and allow the top of the chicken to brown.

After an hour and 15 minutes, check to make sure that the chicken is done. If it is, let the chicken "rest" for 15 minutes before serving.

NEW POTATOES IN MICROWAVE WHITE SAUCE

18-24 small red potatoes, washed thoroughly to remove all dirt
1 T. butter
seasoned salt and pepper

Place the red potatoes in a pot along with the butter, salt, and pepper. Add enough water to cover the tops of the potatoes. Cook on medium for 25-30 minutes. To check to see if the potatoes are done, slice one into. If it slices easily, the potatoes are done. Drain the poatoes and mix with white sauce.

MICROWAVE WHITE SAUCE

2 T. butter
2 T. flour
1 T. minced onion
seasoned salt and pepper
1 cup milk

Melt butter in a microwave-safe casserole dish. Add the onion and cook on 50 power for 1 minute. Stir in flour, salt, and pepper. Pour in the cup of milk. Cook for 3 minutes on high, stirring after each minute.

CAULIFLOWER AND RED BELL PEPPER STRIPS

1 head of cauliflower, separated into florets
2 T. olive oil
1 red bell pepper, seeded and cut into strips
seasoned salt

Place cauliflower florets in the pot. Add bell pepper strips. Sprinkle the cauliflower with bell pepper strips seasoned salt. Pour olive oil over the vegetables. Place 1 1/2-2 cups of water in the pot. Cook for 20 minutes or until cauliflower and red pepper strips are done.
