More salt (again)
Misc. I found the article I had referred to, it did not add anything substantial. it was a review of a book about salt, published in the Toronto Star a couple of weeks ago.
From Cook's Illustrated, I had saved this note a while ago: From brand to brand, kosher salts differ in their weights and volumes, but in general, if substituting kosher salt for table salt, use about 30 to 50 percent more kosher salt than table salt.
