Recipe: Chicken Egg Drop Soup with Spinach

CHICKEN EGG DROP SOUP WITH SPINACH

6 cups chicken broth
1/2 cup finely diced celery
2 tablespoons minced onions (or scallions)
2 eggs, beaten
1 1/2 cups fresh spinach

Bring the chicken broth to boil in large covered pot. Add the celery and onion to cook about 10 minutes.

Boil up and pour in the beaten eggs. Keep at a rapid boil, stirring until the eggs shred.

Add spinach and cook only about a minute longer.
