Recipe: Breakfast Quesadillas

6 (10-inch) flour tortillas
6 ounces jack cheese, grated
12 eggs, beaten*
12 ounces fresh diced jalapenos (or 12 ounces canned diced jalapenos)
Cilantro (for garnish)
Guacamole (optional, for serving)
Salsa (optional, for serving)
Warm flour tortillas. Sprinkle each tortilla with 1 ounce grated Jack cheese.
Separately, scramble (cook) eggs with jalapenos.
Spread two scrambled eggs over each tortilla and close. Cut into four triangles. Garnish with cilantro. Serve with guacamole and salsa (optional).
*If using frozen or liquid whole egg: 1 pound 5 ounces.
