Recipe(tried): Alabama-Style Meatloaf, Mashed Taters, Peas and Carrots, Garlic Bread, and Banana Nut Bread with Guava Glaze and Coconut

I have finally finished decorating the outside and inside for Halloween & Fall. I had gone to Home Depot to get some yellow mums and was quite disappointed at the selection. Then I spied some luscious and full orange/yellow marigolds, bought $20.00 worth and put them in fruit and vegetable baskets out front; one basket by the entryway and another basket by the mailbox along with a pumpkin. The baskets are full and plump with the marigolds.... By the door entryway, I have a beautiful Fall sunflowers wreath and lots of pumpkins and black cats.

Inside I decorated the mantle with witches, pumpkins, black cats and witch's shoes as well as the breakfront in the dining room. In the kitchen, I have a crab trap that stands up on a counter and has divisions in it to place stuff on for the holidays. I decorated that also with pumpkins, spiders, witches & black cats. It looks positively charming!

For dinner tonight I will be making:

Mama's Sweet Iced Tea
Banana Nut Bread with Guava Glaze and Coconut

All the recipes have been posted here except for the Banana Bread so here it is.....it is really, really delicious!!

BANANA NUT BREAD WITH GUAVA GLAZE AND COCONUT
Makes 1 loaf

1 tsp. baking soda
4 Tbsp. buttermilk
1/2 cup margarine, room temperature
1/2 cup Splenda
2 large eggs
3 very ripe bananas, mashed
1 tsp. vanilla
1 1/2 cups all-purpose flour
1 cup chopped walnuts
3/4 tsp. salt
FOR THE GLAZE:
1 to 2 tsp. guava preserves
1 to 2 Tbsp. shredded coconut

Preheat oven to 350 degrees. Grease and flour a loaf pan.

Dissolve baking soda in buttermilk; set aside.

Cream margarine and Splenda together; add eggs, bananas, and vanilla. Add buttermilk mixture, flour, walnuts, and salt and mix well. Pour into prepared pan.

Bake in oven for 1 1/4 hours.

FOR THE GLAZE:
After you take out of the oven, invert onto serving platter and brush top with guava preserves and sprinkle the shredded coconut on top. Yummmmmm!!!
