Cajun Deviled Eggs

Makes 3 to 6 servings

6 hard-cooked eggs
1/4 cup finely chopped tasso ham
1 tablespoon finely chopped green bell pepper
1 scallion -- finely chopped
1/2 teaspoon lemon juice
2 tablespoons mayonnaise
2 tablespoons Dijon-style mustard
1 Pinch freshly ground black pepper
1 Dash hot pepper sauce

Cut the eggs in half lengthwise. Remove the yolks, and put them in a small bowl. Set the whites aside. Mash the yolks with a fork. Add the remaining ingredients to the yolks, and mix well with a fork. Taste and adjust the seasonings.

Spoon the mixture into the egg whites.
