Recipe: Cherry Nut Delight (with pineapple, sweetened condensed milk, and Cool Whip)

CHERRY NUT DELIGHT

1 1/2 cups chopped pecans, divided
1 can (21oz) cherry pie filling
1 can (20oz) crushed pineapple, drained very well
1 can Eagle Brand sweetened condensed milk
1/4 cup lemon juice (fresh)
1 large container of Cool Whip, thawed
5 drops red food coloring (optional)

Set aside 1/3 cup chopped pecans for topping.

Mix together remaining pecans, cherry pie filling, pineapple, condensed milk, and lemon juice.

Mix Cool Whip and food coloring together, add to other ingredients. Place in a serving bowl. Top with 1/3 cup chopped pecans.

Refrigerate until set, approximately 1 hour.
