I love this recipe. The only thing is that I cooked it covered, for 20 or more minutes. It is delicious, served over white rice or over mashed potatoes. In PR we serve it with tostones or maduros (green or yellow plaintains tostones).
POLLO A LA CHILINDRON
(Chilindr n Style Chicken)
One chicken, cut up
1 cup chopped smoked ham
2 large tomatoes - chopped
1 red pepper chopped
1 green pepper chopped
1 large onion
3 cloves garlic minced
2 tablespoons olive oil
1 cup white wine
1 teaspoon mild paprika (I like smoked Paprika)
Salt to taste
Saut the chicken pieces until they turn brown and set aside. Saut green and red peppers, onion and garlic. Stir in paprika. Return the chicken to the pan. Cook for about 10 minutes on medium heat, stirring occasionally. Add the chopped ham. Cook for five more minutes. Add wine and chopped tomatoes. Simmer, uncovered until chicken is fully cooked - about 25 additional minutes.
