You can probably find this mixture in the grocer's freezer, but I mixed my own.
I had a bigger crowd to feed. This was a big hit, and even the pickiest eater had seconds and thirds, and so did the children. (It was gone before I sat down at the table.)
1 lg bag frozen corn (not cobs)
2 cans black beans, drained
2 large cans chopped tomatoes, Mexican style
1 large chopped onion
1 large diced green bell pepper
1 large diced red bell pepper
1 Tbsp cilantro (dried)
oil & vinegar
Tobasco or Cayenne pepper
Mix vegetables and cilantro. Use oil and vinegar as a dressing and to moisten the vegetables well. Season with Tobasco or Cayenne pepper to taste. (A little taco sauce mixed in too, would be good also.)
