Recipe: Cottage Pie

Cottage Pie

1 pound ground beer (or, use lamb and make Shepherd's Pie)
1 1/4 Tablespoons cooking oil
1 small finely chopped onion
3 Tablespoons flour
1/2 cup plus 2 Tablespoons brown stock (if you don't have stock on hand, use beef broth or bouillon)
1 1/4 teaspoons chopped parsley
Pinch of marjoram or lovage
Salt and pepper
1 1 /4 teaspoons Worcestershire sauce
2 cups cooked, mashed potatoes

Preheat oven to 350 degrees F.

Heat the oil in a large skillet and fry the meat and onion until brown. Stir in the flour and stock. Add the parsley, marjoram and salt and pepper to taste. Blend in the Worcestershire sauce. Put this mixture in an oven-proof dish that has been sprayed with cooking spray. Smooth the mashed potatoes over the top and riffle the surface with a fork.

Bake for 45 minutes or until the top is golden brown.

Makes 4 to 6 servings.
