CRABMEAT PASTA SALAD
I made this on Saturday and we enjoyed it for several meals as it makes a large quantity. This salad is very versatile - you can add or delete any of your favorites...cukes, black olives, zucchini, broccoli, croutons, etc.
1 box rotina pasta
1 package imitation crab meat, cut up
1 small red onion, diced
1 (10 oz) pkg frozen peas, thawed
1 cup celery, diced
Salad dressing, mayonnaise type*
Cheddar cheese, small cubes
Cook pasta, drain. Rinse with cold water until cool. Combine all ingredients using enough salad dressing to moisten. Chill overnight.
*I used ceasar ranch salad dressing. Next time I will probably do a oil/vinegar type dressing which my family likes also.
**I thawed the peas by placing peas in a colander and running cold water over them for a few minutes, since we ate the salad shortly after I made it. If I was to let it chill overnight - I wouldn't even bother defrosting them.
