Crispy Mustard Chicken
(4 servings)
2 tb Mayonnaise (diet)
1/4 c Wheat germ
1/2 ts Ground thyme
4 x Chicken breast halves *
2 tb Prepared mustard
1/3 c Fine, dry bread crumbs
1/4 ts Salt
* 4 oz each, skinned and boned
Combine mayonnaise and mustard in a small bowl; stir well. Combine wheat germ and other ingredients except chicken in in a shallow bowl. Brush each chicken breast with mustard mixture, then dredge in breadcrumb mixture. Place chicken in a 10x6x2" baking dish that has been coated with Pam. Cover and bake at 350 deg F for 40 minutes. Uncover and bake an additional 20 minutes or until chicken is tender.
