Recipe: Ham and Pineapple Kabobs (Servings for 4 and 100)

Ham and Pineapple Kabobs

Servings for 4:
3 tablespoons brown sugar
2 tablespoons distilled white vinegar
1 tablespoon vegetable oil
1 teaspoon prepared mustard
3/4 pound cooked ham, cut into 1 inch cubes
1 (15 ounce) can pineapple chunks, drained

Servings for 100:
4 2/3 cups brown sugar
3 cups and 2 tablespoons distilled white vinegar
1 1/2 cups and 1 tablespoon vegetable oil
1/2 cup and 1 teaspoon prepared mustard
18 3/4 pounds cooked ham, cut into 1 inch cubes
25 (15 ounce) cans pineapple chunks, drained

Preheat an outdoor grill for high heat and lightly oil grate.

In a medium bowl, mix together brown sugar, distilled white vinegar, vegetable oil and prepared mustard.
Alternate cooked ham and pineapple chunks on skewers.
Place skewers on the prepared grill. Brush liberally with the brown sugar mixture. Close the lid. Cook 6 to 8 minutes, turning frequently and basting often, until hot and richly glazed.
