Hamburger Cabbage Casserole
Servings 6
1 pound ground beef
1 large onion, chopped (1 cup)
1/2 cup uncooked instant rice
1/2 teaspoon pepper
1/2 teaspoon salt
1 can (10-3/4 ounces) condensed tomato soup
1/4 cup water
4 cups coleslaw mix or shredded cabbage
1 1/2 cups shredded mozzarella
Heat oven to 400 F. Cook beef and onion in 10-inch skillet over medium heat 8 to 10 minutes, stirring occasionally, until beef is brown; drain. Stir in rice, salt, pepper, soup, cheese and water. Place coleslaw mix in ungreased 2-quart casserole. Spoon beef mixture over coleslaw mix. Cover and bake about 45 minutes or until hot and bubbly.
