Hearty Bratwurst and Potato Soup
Recipe By : 100 Favorite Soups & Stews, Better Homes & Gardens
Makes 4 main-dish servings
Description: "This easy main dish is perfect for a casual Saturday night supper with friends."

1/2 cup chopped onion
1/2 cup shredded carrot
1 tablespoon margarine or butter
2 cups sliced potatoes -- (2 medium)
1 1/2 cups chicken broth
1 cup milk
2 tablespoons all-purpose flour
1 12 ounce package fully cooked bratwurst -- sliced
1/2 cup loose-pack frozen peas
1 dash bottled hot pepper sauce

In a 3-quart saucepan cook onion and carrot in margarine or butter till onion is tender. Add potatoes and broth. Bring to boiling; reduce heat. Cover and simmer about 20 minutes or till potatoes are tender.

With a fork or potato masher. slightly mash potatoes. Stir milk into flour: add to potato mixture with bratwurst, peas, and hot pepper sauce. Cook and stir till bubbly. Cook and stir for 1 minute more.
