Recipe: Orange Yogurt Cake with Orange Glaze

ORANGE YOGURT CAKE

1 cup butter, softened
5 eggs
1 cup plain yogurt
1/2 tsp baking soda
2 1/4 cup flour
3 cups sugar
1 tsp vanilla
1/4 cup orange juice
1 1/2 tsp grated orange rind

Cream butter with the sugar until light & fluffy.
Beat in eggs, one at a time. beating well after each addition.
Add vanilla.
In a small bowl mix the yogurt and soda.
Add to creamed mixture alternately with flour.
Beat in orange juice and rind.
Pour into a well buttered 10 cup bundt pan.
Bake 350 for 45-50 min.

ORANGE GLAZE ICING
1 tbsp butter
2 cups icing sugar
1/4 cup orange juice
1 tsp grated orange rind

Combine all ingredients.
Blend until smooth.
Spoon over cake.
