Mandarin Orange Muffins
2 1/4 c oat-bran cereal
1 tb baking powder
1/4 c chopped walnuts
1/4 c brown sugar
1 1/2 c skim milk or evaporated skim milk
1/4 c mandarin juice from can
2 egg whites
2 tb vegetable oil
1 sm (1 cup) can of mandarin oranges
Preheat oven to 425 deg. In a large bowl, mix together the first 4 ingredients. Mix the next 4 ingredients in a bowl or blender. Add to the dry mixture and mix. Mix in the oranges. Line muffin tins and fill with batter. Bake 15-17 minutes. Makes 12 muffins.
