Recipe: Mushroom Business (strata)

Mushroom Business
Serves 8
(An interesting version of the ever popular strata that vegetarians & mushroom fans will love.)
1 lb. fresh mushrooms
3 Tbsp. butter
8 slices buttered white bread
1/2 c. each of chopped onion, celery & green pepper
1/2 c. mayonnaise
3/4 tsp. salt
1/8 tsp. pepper
2 eggs
1/3 c. milk
1 can cream of mushroom soup
grated cheese(of your choice)
Saute coarsely chopped mushrooms in butter till the aroma comes out. Cut 3 of the bead slices into cubes & place in buttered 2 quart casserole dish.
Combine onion, celery, green pepper & mayonnaise. Add salt & pepper & spread over bread cubes. Add mushrooms. Top with 3 more cubed bread slices.
Beat eggs slightly with milk & pour over. Refrigerate for at least 1 hour or overnight.
Before baking, spread mushroom soup over the top & top with last 2 slices buttered, cubed bread. Bake at 300 degrees for 60-70 minutes or at 350 degrees for 50-60 minutes.
About 10 minutes before end of baking time, sprinkle with grated cheese.
