SESAME BEEF STRIPS
1 pound beef flank steak
1/4 cup toasted sesame seeds
3 tablespoons flour
3/4 teaspoon EACH ground coriander, ginger and chill powder
1 cup beef broth
3 tablespoons vegetable oil
2 cups hot cooked rice (optional, for serving)
Slice beef thinly across the grain.
In shallow bowl, mix sesame seeds, flour and spices.
Dip beef strips into broth; then toss in flour mixture.
Heat oil in wok or non-stick surface skillet until hot; add beef. Cook, stirring constantly, about 2 minutes. If necessary, add a little beef broth to keep beef from sticking to bottom of pan.
When beef is cooked, add remaining broth. Cook, stirring constantly, until thickened and heated through.
Serve over rice, if desired.
Makes 4 servings
