Sweet and Sour Cassava (Yuca Agridulce)
Servings: 6
3 pounds yuca (cassava), cut into small dice (about 3 cups)
salted water
2 tablespoons butter
2 tablespoons soy sauce
1 1/2 tablespoons brown sugar
Cook the yuca in the salted water for 25 minutes. Drain and set aside. Melt the butter in a frying pan. Add the soy sauce and sugar. When butter mixture starts to bubble, add the yuca. Saute over medium-high heat for 5 minutes.
