Recipe(tried): White Bean Salad (very easy)

White Bean Salad (Very Easy)

1 can cannellini Beans
2 tb lemon juice
3 tb good olive oil
1 tb prepared mustard
1/4 tsp dried oregano, crumbled
pinch of ground pepper
1/2 cup finely chopped red onion
2 tb chopped parsley or cilantrillo
(I usually add chopped pimento)

Drain beans. Rinse with cold water & drain. Turn into serving bowl. Whisk lemon juice, olive oil, mustard, oregano & ground pepper in small bowl. Pour over beans. Add onion & parsley. Refrigerate and serve.
