I just love spinach, too, Gina!

I was so happy when it made the "superfoods" list! I even liked it when I was a kid, go figure!

Last night, I quickly prepared spinach one of my favourite ways..."Korean spinach". Have you ever tried it?...it's good fresh from the pan (hot), or room temperature, or even cold.
So you can never make "too much", because you can eat it for days, if you don't finish it at dinner time (as we did, darn!)

I had put whole, washed potatoes (skin and all) with quartered onions in the bottom of the slow cooker, then a marinated roast beef, in a cooking bag, on top. I also made chimichurri sauce to go with the roast beef, baked potatoes and spinach.
It was pretty fancy for a weeknight meal, but it all came together quickly after I got home from work. I had picked the parsley for the chimichurri from my garden before I went to work; that's about the only plant alive around here that's outside, unlike your lovely flowers!

Your walks sound wonderful! I love to go for a walk! Luis gave me a lovely, reconditioned by him, treadmill for x-mas. He got it at the recycling depot (free or cheap, I'll never know). It folds up, and I have it out in the carport. It looks kind of complicated...but I will figure out how to program it someday soon. I took the holidays off from working out (I weight-train, and swim), but I am back to it as of this week. I am kinda sore, don't mind telling you! I also used to do a lot of yoga, and I am going to get back to that really soon, as it provides a lovely stretching antidote to the weight training. And it really helps me focus, and quiets my thoughts. Hey! just talked myself into it! This is the week, look out fitness, here I come!

I know I have been kinda scarce around here, but I just started a new job a few weeks ago, and I am adjusting to a new schedule. I'll be back on track soon, I am sure!

p.s. I am going to make a cocoa mix with Splenda packets and nonfat dry milk powder. I'll try it tomorrow for breakfast...if it's any good, I'll pass it along!
