BITTERSWEET CHOCOLATE SAUCE
1/2 cup whipping cream
2 tbsp unsalted butter
1 tbsp brown sugar
4 oz unsweetened chocolate,* chopped
1/4 tsp finely grated orange zest (optional)
In medium saucepan, bring whipping cream, butter, and brown sugar to simmer.
Remove from heat. Add chocolate and whisk until melted and smooth. Stir in orange rind.
*Substitute semi-sweet or milk chocolate for a milder chocolate flavor.
TO MAKE AHEAD:
This can be made ahead and refrigerated. Rewarm in glass measuring cup in the microwave on low power, in 30 second intervals, covered. Stir frequently and heat just until liquid enough to pour.
