Recipe: Cajun Eggs

Cajun Eggs
serves 6 or 4 hearty eaters
8 eggs
1 cup grated cheddar cheese
1/2cup green onions, chopped
1/4 teaspoon salt
cayenne
black pepper
hot pepper sauce
1 lb. hot smoked link sausage
1 tablespoon flour
1/3 cup milk
In large bowl, combine eggs, cheese, onions, salt and pepper, pepper sauce. Cut sausage into small slices and pan-fry. When done, remove and add flour stirring until light brown (we call this a roux). Stir in enough milk to make a light gravy. Add egg mixture and sausage, stirring until it is the consistency of scrambled eggs. Adjust seasonings.
