Recipe: Homemade Marshmallows

HOMEMADE MARSHMALLOWS
very nice for Easter

2 envelopes knox (unflavored) gelatin
1/2 cup cold water
2 cups sugar
1/2 cup hot water
Coconut

Soak gelatin in 1/2 cup cold water.

Bring sugar and 1/2 cup hot water to a boil and boil for 2 minutes.
Pour over soaked gelatin and beat until very stiff.

Spread in an 8-inch pan that is lined with coconut. Cool 2 hours.

Cut in squares with a hot knife. Roll in the white coconut, or put coconut in a few different bags and sprinkle food coloring in each bag to make different colors.
