Knishes Stuffed with Mushrooms and Spinach (Parve)
Fresh or frozen spinach may be used. The mashed potatoes must be cooled before starting the recipe. This recipe is handy for using up leftover potatoes, spinach, that bit of onion, and so on.
Makes about 6 knishes.
Serves four to five.
Knish mixture
4 cups mashed potatoes (4 to 6 potatoes)
2 egg whites
1/2 cup matzo meal or cake meal
salt and pepper -- to taste
Stuffing
1 tablespoon oil
1 clove garlic -- minced
1/2 onion -- diced
3 mushrooms -- diced (3 to 4)
1 cup cooked spinach -- drained well

nonstick spray (optional)
Preheat oven to 350 degrees. Grease or spray a cookie sheet.
Prepare stuffing mixture: Heat oil and add garlic, onion and mushrooms. Saute for about 5 minutes, until onions and mushrooms start to brown. Turn off heat and stir in spinach.
Knishes: Mix potatoes with egg whites, then add other ingredients. Make patties with the potato mixture and place on the cookie sheet. Top each patty with a spoonful of the stuffing mixture, then another patty. Flatten slightly. Bake 15 minutes, then turn over and bake for 15 to 20 minutes longer.
