Recipe: Chicken Salad Log

Chicken Salad Log

From a friend in 1990
Another of many favorites

1 (8 oz) pkg. cream cheese, softened
1/4 cup mayo
1/2 tsp salt
1/8 tsp pepper
2 Tbsp lemon juice
4 drops Tabasco
2 cups finely cut chicken
2 boiled eggs, chopped
1/4 cup chopped green onions
1/4 tsp ground ginger

Mix cheese, mayo, lemon, salt and pepper, ginger, and Tabasco. Add remaining ingredients. Shape into 8x2 logs; chill 4 hours. Serve with crackers. Doesn't need it but can be topped with toasted sesame seeds or chopped green onions.
