Recipe: Snowball Suprises

Snowball Suprises
Makes 40 cookies

Went to a Christmas cookie swap in 1995 - She got from Southern Living

1 cup butter, softened
1/2 cup sugar
1 tsp vanilla extract
2 cups all purpose flour
1 cup finely chopped pecans
10 chocolate coated peppermint patties, quartered,(I use what ever candy sounds good to me at the time, have used Rolos)
sifted powdered sugar

Beat butter at medium speed w/an electric mixer until creamy; gradually add sugar, beating well. Stir in vanilla. Gradually stir in flour and pecans, mixing well; cover & chill at least 1 hour. Press 1 tbsp dough around each candy piece, forming a ball. Place on ungreased cookie sheets; bake at 350F for 12 minutes (cookies will not brown) Let cool 5 minutes on cookies sheets; roll in powdered sugar. Place on wire racks to cool. May be frozen up t 1 month.
