Recipe: Mississippi Mud Cake

Mississippi Mud Cake

1 cup Wesson oil (vegetable oil)
1/3 cup cocoa
4 eggs (whole)
1 3/4 cup sugar
1 1/2 cup self-rising flour
2 tsp. vanilla
2 cups chopped nuts

Mix ingredients and bake in oblong cake pan at 300F for 30 - 45 minutes. Cover with small marshmallows when removed from hot oven.

Icing:

1 1/2 sticks (3/4 cup) margarine
1 tbsp. vanilla
1 box powdered sugar
1/3 cup cocoa
1/2 cup evaporated milk
1/2 cup chopped nuts

Mix all ingredients well. DO NOT COOK. Pour over cake while still warm.
