Chocolate Fruit Truffles

These taste just like one would think Christmas should taste.
and they are so very easy!! It's from the Borden mincemeat leaflet...
2 1/2 cups of vanilla wafer crumbs
(about 1 box, I ran them through the food processor)
1 (14 oz) can eagle sweetened condensed milk
1 (9 oz) pkg None Such "condensed" Mincemeat,
1 cup chopped cashews or almonds
1/2 cup candied cherries
2 tablespoons unsweetened cocoa
1/2 teaspoon of almond extract
confectioner's sugar
In a large bowl combine everything except the powdered sugar (I put it all thru the food processor, went very fast, first the dry and then the wet ingredients).
Chill for at least 4 hours, or overnight if you can.
Dip your hands into powdered sugar, roll dough into 1 inch balls and roll in powdered sugar. Place on wax paper and chill 2 more hours until firm. Store tightly covered in refrigerator.
They improve in flavor after 24 hours. (I thought they were great after just 4!)
