Recipe: Turkey Gobble-Ups (broiled open-faced sandwiches with avocado, tomatoes, and cheese)

As yummy as the name implies.
6 English Muffins
2 large avocados
1/2 cup mayonnaise
1/2 medium onion, finely diced
12 slices Monterey Jack cheese
2 large meaty tomatoes, sliced
3 cups sliced, or diced turkey meat
Butter
Salt and pepper
Split muffins in half and butter; place on a cookie sheet and put under broiler to toast. Remove from broiler and set oven to 400 degrees.
Mash both avocados, add mayonnaise and onion; salt and pepper to taste. Spread avocado paste on toasted muffins. Add a slice of tomato and diced or sliced turkey. Top with Monterey Jack cheese slices.
Place in hot oven for 5-10 minutes. Set the oven on broil and set sandwiches under broiler just long enough for the cheese to bubble.
Variation: Add crisp crumbled bacon on top of cheese.
