Recipe: Marinated Mushrooms and Cucumbers

Marinated Mushrooms & Cucumbers:
Serves 4
Source:Betty Crocker's Chinese Cookbook.Recipes by Leeann Chin.

1 medium cucumber
1 tsp.salt
8 oz.small mushrooms
1 Tbls.vegetable oil
1/4 c.white wine vinegar
2 Tbls.sugar
1 Tbls.light soy sauce
1 Tbls.chili paste
1 Tbls.sesame oil

Pare cucumber,cut lengthwise into halves & remove seeds.Cut cucumber diagonally into 1/2 inch slices.Sprinkle salt over cucumber in small bowl.Let stand at room temperature 30 minutes.
Squeeze out excess moisture,pat cucumbers dry with paper towels.Cut mushrooms into halves,toss with vegetable oil.

Mix vinegar,sugar,soy sauce,chili paste & sesame oil,toss with cucumber & mushrooms.Cover & refrigerate 1 hour,stirring 1 or 2 times.Drain just before serving.Garnish with chopped green onion if desired.
