Recipe: Cheesy Stuffed Squash

Cheesy Stuffed Squash:
Serves 6

6 medium size yellow squash
1/2 lb.bacon
1 small onion,chopped
3/4 c.soft bread crumbs
1 c.(4 oz.)shredded sharp cheddar cheese
paprika
fresh parsley sprigs,opt.

Wash squash thoroughly & cook in boiling salted water to cover for 8-10 minutes or till tender but still firm.Drain squash & cool slightly.Remove & discard stems.Cut each squash in half lengthwise,remove & reserve pulp,leaving a firm shell.

Fry bacon in a large skillet till crisp,drain well on paper towels,let cool.Reserve 2 Tbls.of bacon drippings in skillet.Crumble bacon & set aside.Saute onion in drippings till tender,stir in crumbled bacon,breadcrumbs & squash pulp.

Place squash shells in a 13"x9"x2" baking dish.Spoon squash mixture into shells & top with cheese.Sprinkle with paprika.Broil 6 inches from heat about 5 minutes or just till cheese is melted.Garnish with parsley,if desired.
