Recipe: Beefsteak Tomatoes with Garden Herbs

Beefsteak Tomatoes with Garden Herbs:
Serves 8

4 green onions,finely chopped
1 clove garlic,minced
1 tsp.minced hot chili pepper(Serrano,Jalapeno,etc.)
2-3 Tbls.fresh lemon juice
3 Tbls.olive oil
1/2 c.plain yogurt
salt & pepper to taste
1 c.lightly packed mixed garden herbs(parsley,chives,basil,marjoram,etc.)
4 large beefsteak tomatoes,sliced
1 sweet onion,thinly sliced

Combine green onion,garlic,chilis & lemon juice.Beat in olive oil & yogurt gradually.Add salt & pepper.Finely chop herbs & add.This may be done in a food processor or blender.Refrigerate.Serve over sliced tomatoes & onions.
