Skillet Potatoes:
Serves 6
1/4 c.bacon drippings or vegetable oil,divided
4 c.thinly sliced raw potatoes(no need to pare)
1 medium onion,thinly sliced
1 tsp.salt
1/8 tsp.cracked black pepper
1/2 tsp.rubbed dried sage leaves
1 tsp.dried parsley flakes,opt.
Heat half the bacon drippings in a heavy non stick skillet over low-medium heat,add potatoes & onion.Sprinkle over part of the seasonings,cover pan & cook about 15 minutes.
Lift & turn potatoes,sprinkling with remaining seasonings.Cover & cook 15 minutes longer or till done.Turn or stir potatoes once or twice during last 10 minutes so they cook evenly.Add bacon fat or oil as needed.
