Recipe: Speedy Sour Cream Rice

Side Dishes - Rice, Grains
Speedy Sour Cream Rice:
Serves 4
Source:Prevention's Quick & Healthy Cooking.

1 c.hot cooked quick cooking white or brown rice
1/2 c.nonfat sour cream
1/2 c.nonfat plain yogurt
1/2 tsp.onion powder
white pepper to taste
1 Tbls.minced parsley
1 Tbls.Parmesan cheese

While the rice is still in the cooking pan,stir in the sour cream,yogurt,onion powder & pepper.Recover the pan & let stand off the heat for 5 minutes.Top with the parsley & cheese.

Per serving: 240 calories,6.6 g fat(25% of calories)1.9 mg cholesterol,81 mg sodium,2.5 g dietary fiber.
