Recipe: Noodles with Red Pepper Sauce

Main Dishes - Pasta, Sauces
Noodles w/Red Pepper Sauce:
Serves 4-6

3 Tbls.vegetable oil
1 medium onion,chopped
2 bay leaves
1/4 tsp.ground coriander
1/8 tsp.ground cloves
2 Tbls.chopped cilantro
2 cloves garlic,minced
1/2 c.water
3 roasted red peppers(or one 12 oz. jar)
1/2 tsp.cayenne pepper
1/2 tsp.salt
1/4 tsp.black pepper
12 oz. wide egg noodles, cooked
grated Parmesan or Romano cheese

Heat oil in saucepan,add onion,bay leaves,coriander,cloves,cilantro & garlic.Cook & stir till onion is tender,4-5 minutes.Add water & simmer for 10 minutes.Remove bay leaves & discard.

Put onion mixture & roasted peppers in food processor or blender & puree.Season with cayenne,salt & pepper,adding water if mixture is too thick.Heat & serve over hot cooked noodles.May be topped with grated cheese if desired.
