Recipe: Stuffed Sweet Red and Yellow Peppers

Side Dishes - Assorted
Stuffed Sweet Red & Yellow Peppers:
Serves 8

1/2 c.butter
1/2 lb.mushrooms,chopped
1 c.minced fresh parsley
1 c.sliced green onions
1 c.cooked white rice
2/3 c.chopped toasted pecans or almonds
1 tsp.ground ginger
1/4 c.chicken broth
salt
8 medium sweet red & yellow bell peppers

In a fry pan melt butter,add mushrooms,parsley & green onions.Cook till tender.Add rice,pecans & ginger,stirring to mix.Add chicken broth,cook & stir till liquid is absorbed.Makes 3 1/2 c.stuffing.

Wash & clean peppers.Cut off top & carefully scoop out interior.Blanch peppers in boiling salted water for 3-5 minutes.Remove from cooking water & cool under running water.Turn upside down to drain.

Spoon rice stuffing into peppers & replace tops.Arrange them in a baking dish.Cover with aluminum foil.Bake in a 350 degree oven for 35-45 minutes.
